Thai noodle salad with salmon

1 salmon fillet
50g rice noodles
Mixed vegetables- carrot, asparagus, mange tout, baby corn, red pepper, bean sprouts
lime juice
Cayenne pepper
Sesame oil
Coriander

1. Place the salmon in a steamer and cook for 10 min
2. While the salmon is cooking, cook the noodles (follow directions on the packet). Rinse and drain under cold water.
3. Steam carrots, asparagus, mange tout and baby corn until tender and crisp, then rinse under cold water.
4. Toss the steamed vegetables and noodles together in a large bowl with the red pepper and bean sprouts
5. Mix the lime juice, cayenne pepper, sesame oil and coriander in a bowl and pour over the salad.
6. Put the salad on a plate and place the salmon fillet on top.
