Carrot & Walnut Loaf

This is a great recipe to make if you love your bread. It is high protein, low carbs and high in fibre. It is also gluten and dairy free! You can use it as a snack with some nut butter, as a breakfast, or even use it as bread for sandwiches! Just make sure you remember the baking powder! I forgot this the second time and it turned out like a rock!! Enjoy! :-)

Dry ingredients-

cup whey/pea/rice protein powder
1 cup ground flaxseeds
2 grated carrots
cup crushed walnuts
Tsp cinnamon
tsp nutmeg
1 tbsp raw honey (optional)
1 tsp baking powder
Pinch sea salt or Himalayan crystal salt

Wet ingredients-

3 eggs, beaten
cup milk (almond, coconut, rice, oat)
1 tbsp coconut oil

Mix dry with wet!
Place in a bread tin lined with greaseproof paper.
Top with walnuts and grated carrot
Bake for 20 min at 180 degrees
